Grain Free Fried Rice

In need of a delicious and satisfying meal that can accommodate just about any diet? This meal is super quick and easy while being:

  • gluten free

  • grain free

  • paleo

  • vegan

  • vegetarian

  • budget friendly

With the start of the new year, I am focused on meals that are nutritious but using less meat. Why? It just feels right. I tune into my body and adapt based on what it needs. I have been feeling for a few months that I was eating to much meat. This was causing a slow down in my digestive system and excess work for my liver. It also helps to lower our monthly food budget as that is another big focus of mine this year. We have been looking for numerous ways to cut cost - literally trimming the bacon in more ways than one. This fried rice was the perfect meal that left us feeling full and satisfied without weighing us down or crushing our budget.

Grain Free Fried Rice

INGREDIENTS

  • 1 pint of sliced organic cremini mushrooms

  • 2 T EVOO (or sesame oil)

  • 1 (12 oz) bag of frozen riced broccoli

  • 1/2 bag (6 oz) of frozen riced cauliflower

  • 2 cups of organic frozen mixed veggies (carrot, corn, green beans, and peas)

  • 1 - 2 cloves of garlic, minced

  • 1 tsp freshly grated ginger

  • fab 4 seasoning (sea salt, cracked black pepper, turmeric, and Italian seasoning)

  • 1 tsp fish sauce

  • 2 T of low sodium tamari

  • 1 T coconut aminos

  • 4 organic eggs, large

  • Optional toppings: fresh chopped cilantro, micro-greens. sesame oil, sesame seeds, and Fix Sriracha Lemongrass Hot Sauce

DIRECTIONS

  1. In a large skillet, add mushrooms to the dry pan and cook on medium heat allowing mushrooms to release their water. Once they start to stick, add a little EVOO (about 1 T) to the pan along with salt and pepper. Cook until desired texture. About 5-7 minutes.

  2. Remove mushrooms and cover in a bowl.

  3. Add riced broccoli, cauliflower, and mixed veggies to the skillet. Let water evaporate off and add 1 T EVOO to the skillet once the veggies start to stick.

  4. Once the veggies have unthawed and are warm throughout add in garlic, ginger, fab 4 seasoning, fish sauce, tamari, and coconut aminos. Stir to combine and coat the veggies.

  5. Make a clear space in the center of the pan pushing veggies to the sides and crack 2 eggs at a time letting them cook before mixing them into the veggie mixture. Do the same for the remaining two eggs.

  6. The fried rice is now ready to serve. I like to top it with the sauteed mushrooms, fresh chopped cilantro, micro-greens. sesame oil, sesame seeds, and Fix Sriracha Lemongrass Hot Sauce for the ultimate win!
