Paleo Pancakes (Gluten free & dairy free)
Who doesn't look forward to a delicious stack of pancakes over the weekend?!? I love them but they are often filled with gluten and drowning in sugar which equates to me feeling horrible all day - no thank you! These Paleo pancakes however will not weigh you down or leave you feeling sluggish - quite the opposite, they will give you the healthy fats and protein you need to get through a busy morning. 🥞 I threw together this new recipe a few weekends ago and wished I would have doubled it they were so damn good‼️ I ended up making a double batch the very next day and turned half into blueberry muffins and the other half into chocolate chip bars. The only change up to the recipe was I used half the milk in the muffins and bars that it calls for in the pancake recipe below. These will be in regular rotation at the Hussey house. 🔁
PALEO PANCAKES 🥞
4 eggs
2 ripe bananas, mashed
one serving of protein powder (I used 2 scoops of vitalproteins)
2 tablespoons almond butter
1 tablespoon of cinnamon (I like a lot )
2 teaspoons of vanilla extract
1 tablespoon of coconut oil
1/2 teaspoon of baking soda
1 teaspoon apple cider vinegar
1/4 cup of coconut flour
grated nutmeg (optional)
1/2 c mylk (I used my homemade cashew coconut)
The thing I love about Paleo baking is that a blender is almost never required, just throw the ingredients into a bowl and mix with a fork! Throw some ghee or coconut oil in a pan on medium heat and flip away! Skip the syrup and simply smear some almond butter with a sprinkle of cinnamon and fresh fruit - you will not miss a thang 🤸♀️ #vivbuzz
