Healthiest Beet Endive Appetizer (GF, DF)
Tis the season for over consumption, upset tummies and enough cheese to back up the Hoover Dam.
Trying to find an actual healthy yet tasty and fresh appetizer in a sea of cheese dips, wings, fried dough, bacon wrapped everything, and so on might be harder than splitting the Red Sea. No worries, VivBuzz to the rescue to help you add a little nutrition to your festive spread.
This appetizer is a winner all year around and so adaptable. If there is one ingredient you don’t like, swap it out or just leave it out all together. Have some fun and live on the edge by adding in something that you like or a seasonal flavor. Winter Beet Endive Boats
Ingredients
3 endive clusters, washed and separated into each leaf
Filling:
1/3 c walnuts, chopped
1/3 c dairy free feta, chopped (I prefer Violife brand)
3/4 c beets, steamed and chopped
1 small sweet potato, sauteed & diced
1/4 c microgreens
Dressing:
3 T EVOO
3 T Champagne vinegar
1/4 tsp dried oregano
sea salt & cracked black pepper to taste
Directions
Mix the chopped beets, walnuts, and sweet potato in a small bowl.
Whisk together all ingredients for the dressing in a separate bowl.
Pour dressing over beet mixture and stir to coat well.
Gently fold in feta.
Scoop beet mixture into each endive boat and arrange on a platter. Top with micro greens and chill until ready to serve.
