Mustard Vinaigrette Salad Dressing

Homemade Salad Dressing. This is one of my favorite go to salad dressings. I love the apple cider vinegar in it because it ensures I do not have heartburn creep up after dinner. The acid also helps to break down the raw veggies which can be hard for the body to digest. The recipe below is perfect for one large salad. Scale up accordingly.

Mustard Cider Vinaigrette
1 T EVOO (I LOVE Greek Olive Oil)
1 T Apple Cider Vinegar
1 T Whole Grain Mustard
1 T Honey Mustard
Salt, Pepper, and Herb de Provence to taste

Directions
Place all ingredients into a small mason jar, screw on lid, and shake vigorously. Will keep in the fridge for 3+ days.

Salad
Mixed greens (amount = personal preference)
½ c cooked quinoa (complete protein source)
¼ c roughly chopped walnuts (healthy fat for brain, hair, and skin)
½ of an avocado (nature’s butter)
1 hard-boiled egg (one of the few foods that natural contains Vit D)
3 black olives (healthy way to add salty flavor)
Sun dried tomatoes (antioxidant)
**Can add poached wild salmon, tuna, shredded chicken, or your favorite protein, if desired.

Directions
1. Toss salad dressing and mixed greens together until evenly coated. 
2. Layer in all other ingredients.
3. Sprinkle oregano for garnish and an extra health kick.
4. Dig in!
