White Chocolate Cranberry Blondies (GF)

I don’t know if blondes have more fun but you will definitely have more fun this holiday season eating these tasty gluten free & grain free blondies so get in the kitchen and start mixing up these tantalizing treats! They are perfect to take to any holiday party or just enjoy eating a few (or 10) each day. They are also super easy to make as you only need a mixing bowl and a fork - no fancy mixer or blender needed here!

For the cranberries, I used my favorite Made in Nature brand. They are sweetened with only apple juice and no added sugar! Win! Win!! They are so plump and moist I could eat the whole bag.

These bars are:

  • easy to make requiring only a bowl, fork, and baking dish

  • grain free

  • gluten free

White Chocolate Cranberry Blondies

Ingredients

  • 1/2 c coconut oil, softened

  • 1/2 c coconut sugar

  • 1/2 c applesauce

  • 1 large egg

  • 3/4 c cassava flour

  • 1/2 tsp sea salt

  • 1/2 c Made in Nature cranberries

  • 1/3 c white chocolate chips

Directions

  1. Preheat oven to 350 degrees.

  2. Stir together coconut oil and sugar with a fork.

  3. Add in remaining ingredients, stirring until well blended.

  4. Pour batter into an 8x8 glass baking dish that has been lined with parchment paper.

  5. Bake for 20 minutes. Let cool and then cut into 12 large squares.

  • Optional: grate a little orange zest on top
