Crème Brule French Toast Casserole, Gluten Free

Breakfast Casserole. There is nothing better than waking up and popping a yummy breakfast casserole in the oven and having a hot delicious breakfast in 30 minutes. This is a great recipe to put together on Saturday afternoon and pop in the oven on Sunday morning. Also great when you are hosting overnight guest to have breakfast ready in a flash.

Crème Brule French Toast Casserole, Gluten Free

Preheat oven to 350 degrees.
Use coconut oil to grease an 8x11 glass baking dish.

8-10 slices of your favorite bread (I used paleo from Whole Foods) 
½ c almond butter (any nut butter will work, this is only added to pump up the protein)
¼ c cinnamon + extra for sprinkling on top
1 lb of your favorite organic breakfast sausage, browned (could even use vegan or turkey links)
¼ c raisins
8 eggs
1 c almond coconut milk (any type of milk will work)
Fresh grated nutmeg
2 T coconut sugar (or any type of granulated sugar)
Coconut Maple Syrup (see recipe below)

1. Tear up bread into bite size pieces. This recipe is a great way to use up stale or ends of bread. Arrange bread in the bottom of the baking dishes. Add more bread as needed to cover the bottom of the dish. 
2. Dollop almond butter evenly over bread pieces. 
3. Sprinkle cinnamon evenly over entire casserole.
4. Arrange browned sausage and raisins over casserole. 
 5. Whisk together eggs and milk and pour over casserole. 
6. Grate fresh nutmeg over top. 
7. Cover with aluminum foil and refrigerate overnight. 
8. Bake or 30 minutes until eggs are cooked throughout. 
9. Sprinkle coconut sugar and cinnamon evenly over the casserole. 
10. Turn oven to Low Broil. Place casserole back in until the sugar caramelizes on op, approx. 5 minutes. 
11. Serve with coconut maple syrup drizzled over top and a nice cup of joe! Cheers to a beautiful Sunday morning!!

Coconut Maple Syrup
½ c maple syrup
½ c coconut almond milk
1 tsp vanilla
¼ c coconut shreds
1 T cinnamon
Place all ingredients in a small saucepan. Heat over low heat whisking until all ingredients are combined and warm throughout.
