Mediterranean Tuna Salad
I made this tasty and nutritious tuna salad this weekend which has been so great to have on hand this week for a quick lunch and a fueling snack. It is loaded with protein, healthy fats, fresh herbs, and veggies.
{Mediterranean Tuna Salad}
✳️ 2 cans of no sat added wild caught tuna Wild Planet Foods
✳️ 1/4 Small red onion, diced
✳️ diced red & yellow peppers to equal 1/4 c
✳️ handful of chopped organic parsley (or any herb you have on hand will work)
✳️ 1 celery stalk, diced
✳️ sea salt, pepper, turmeric, and Italian seasoning (my fab 4 go to seasoning mix for everything)
✳️ 1 T of each: Dijon mustard, Primal Kitchen Foods avocado mayo, lemon juice, and EVOO
✳️ optional: 2 chopped organic hard boiled eggs
DIRECTIONS :
1️⃣ mix everything together and store in fridge at least 30 minutes before serving
2️⃣ I love to serve with sliced avocado, cashews, and olives.
